The yuzu is a head of character: although it looks like a shapeless lemon, under the peel there is a complex and intense world that is far ahead of its smooth, perfect counterpart. It comes, you guessed it, from Japan, where it has long been used in cooking and seasoning. And because learning from Japan means learning to enjoy, it has been growing in popularity in Europe for some time now. Yuzu inhabits its own epicurean world somewhere where tangerine and lime have reached their taste limits. It gives lemonade a subtle and decidedly un-sweet freshness that undeniably recalls that one day: back in spring, on the small island of Naoshima in southern Japan, when the abandoned temple shone in glistening warm midday light and an orange cat greeted visitors.

Calamansi is something of a citrus melting pot. Lime, orange, tangerine and lemon come together as a plea against unambiguity. The calamansi resists the attribution of the exotic simply because a clear classification is difficult. It is a little bit of everything and therefore, of course, more of everything. More vitamin C, phosphorus, calcium and iron. More complexity and more flavor, oscillating between the poles of bitter and sour. The ping-pong ball-sized calamansi may be familiar to some from the street stall on vacation in Southeast Asia. It is self-confident, but selfless, and therefore excellent as a mixed drink. It is comforting to know that the calamansi exists.

Order LIMO from the Brooklyn Cannery online store or get samples for your restaurant or store. Mac looks forward to hearing from you!
For LIMO, tropical fruits are processed into lemonade. Since these fruits are still niche products on the world market, it is difficult to impossible to obtain them in organic quality. In Japan, for example, there are simply (still) too few organically certified yuzu trees to meet the demand for fruit juice for Yuzu LIMO. Switching to yuzu juice from Brazil or Korea is also out of the question, as we do not want to accept any compromises in quality and taste.
LIMO is therefore as organic as it gets: in addition to organic raw cane sugar and organic lime juice, the yuzu and the calamansi juice are of the highest quality and taste, but not certified organic.
By the way, LIMO can be transformed into a delicious drink in no time. We recommend:
Yuzu LIMO with Japanese gin (e.g. Suntory Roku), served with ice cubes and lime zest
Calamansi LIMO with mezcal, lime juice, egg white/Aquafaba, Meldon sea salt, Yozukoshu (jalapenos, lemon, lime zest)
Yuzu LIMO with Grahams Blend Nº.5 White Port, served with Blueberries, Lime & Lemon Slice
Urban is the founder and tastemaker of LIMO & Urban Lemonade. As a trained chef and restaurateur, he mixes together flavorful fruit juices used in high-end cuisine—the result is well-known.
Kevin is Urban's nephew, which is very convenient because he got to enjoy Urban's lemonade early on. As a graphic designer, however, he couldn't just leave the bottle labels Urban had created in PowerPoint as they were and ventured to redesign them.
Jalscha is friends with Kevin and also a graphic designer. When he told her one warm summer night about his legendary Uncle Urban and his lemonade, Jalscha was thrilled and the company founded.
Mac meets Kevin one day in Switzerland and is hooked on the lemonades. With his cannery in Brooklyn, he is the perfect partner for the leap across the pond.
